QUICK & EASY FOOD: VEGAN CAULIFLOWER TACOS

Tacos are the ultimate crowd pleaser. Everyone loves them, right? At home we have many different versions that we make, usually with pork carnitas (shredded pork) or beer battered fried flat head (my favourite!) but I wanted to try a vegan version this time. It didn’t disappoint. This a really versatile dish and can be easily modified to suit different tastes. I like to serve everything in separate dishes on the table with some hot sauce so everyone can build their own tacos.

Ingredients

cauliflower vegan tacos
  • ½ head of cauliflower
  • Olive oil
  • Bunch of coriander
  • 1 avocado
  • 1 bunch of radish
  • 1 lime
  • 1 fresh jalapeno
  • A packet of corn tortillas

Dry Spice Rub

  • 1 tbs whole cumin
  • 1 tbs whole coriander seed
  • 1 tsp dried chilli
  • 1 tsp Mexican oregano
  • 1 tsp salt

Garlic Vegan Aioli*

  • 115g silken tofu
  • 1 tsp crushed garlic
  • 1 tsp salt
  • 60ml soy milk
  • 2 tsp apple cider vinegar
  • 2 tsp dijon mustard
  • 125ml vegetable oil
  • 125ml extra-virgin olive oil


Method

  1. Pre-heat oven to 200*C. Break up cauliflower florets in bite sized chunks, place in bowl.

  2. Grind cumin, coriander seed, dried chilli, mexican oregano and salt in a mortar and pestle.

  3. Coat cauliflower evenly with dry spice rub. Place on lined oven tray and drizzle with olive oil. Roast for 20-30 mins until golden brown and cooked through.

  4. While the cauliflower is cooking, make the vegan aioli by blending all the ingredients in a food processor until smooth then gradually add oil with the blender running.

  5. Thinly slice avocado and radish, slice lime into wedges, pick coriander leaves and place into bowls to serve.

  6. Warm the tortilla according to packet instructions. My preferred method is to fry on a very hot pan for 10 secs each side.

  7. Once cauliflower is ready, serve up in a bowl along with sides and vegan aioli for everyone to build their own tacos. Don’t forget the hot sauce!
